What is Phycocyanin?
Phycocyanin is a pigment-protein complex from the light-harvesting phycobiliprotein family, along with allophycocyanin and phycoerythrin. It is extracted from Spirulina (Arthrospira platensis) and gives the algae its distinctive blue-green color.
Natural Blue Colorant
In the food industry, “Blue Spirulina” is one of the only natural sources of blue dye. Unlike synthetic Blue #1, Phycocyanin is:
- Safe & Edible: Extracted with water, no chemical solvents.
- Vibrant: Creates stunning “Instagrammable” smoothie bowls and beverages.
- Heat Sensitive: Best used in cold applications or low-heat processing to maintain color.
Biological Activity
Beyond color, Phycocyanin is a potent biological agent.
- Antioxidant Power: Scavenges free radicals and inhibits lipid peroxidation.
- Anti-Inflammatory: Studies suggest it inhibits COX-2, an enzyme involved in inflammation (similar to how NSAIDs work, but natural).
- Immune Support: Stimulates the production of white blood cells.
Market Demand
The demand for Phycocyanin is skyrocketing as brands move away from artificial colors. ToNutra offers E18 and E25 grades, suitable for both food coloring and nutritional supplement use.
